Gluten Free Black Rice Budda Bowls
Ingredients:
2 Simson’s Pantry Black Rice Wraps
1 tbs. extra virgin olive oil
1 cup cooked black rice
2 hardboiled eggs
½ cup grated carrot
½ cup grated beetroot
½ cup sliced sugar snap peas
6 cherry tomatoes, halved
1 tbs. sunflower seeds
Method:
- Preheat oven to 180C.
- Brush wraps on both sides with olive oil.
- Place each wrap carefully inside an oven proof bowl on an oven tray.
- Bake in oven 10-15 minutes until crisp.
- Remove from oven and allow to cool.
- Once cooled fill wrap bowl with salad ingredients and serve.
