Lemony Pepper Chicken Wraps
4 Simson’s Pantry™ wraps (heated as per packet instructions)
2 chicken breasts, cooked and sliced
1 cup low fat yoghurt
1 tbsp. lemon zest
1 tbsp. lemon juice
Freshly cracked pepper and salt to taste
150g fresh salad leaves
1 avocado, peeled and sliced
Handful of fresh coriander
Combine the yoghurt with the lemon juice, zest and seasoning. Mix together well.
Spread each wrap with a bit of the yoghurt mix.
Add some of the sliced cooked chicken.
Top with the fresh salad leaves, sliced avocado and a sprinkle of coriander. Wrap and enjoy!
