Gluten Free Black Rice Budda Bowls
2 Simson’s Pantry Black Rice Wraps
1 tbs. extra virgin olive oil
1 cup cooked black rice
2 hardboiled eggs
½ cup grated carrot
½ cup grated beetroot
½ cup sliced sugar snap peas
6 cherry tomatoes, halved
1 tbs. sunflower seeds
Preheat oven to 180C.
Brush wraps on both sides with olive oil.
Place each wrap carefully inside an oven proof bowl on an oven tray.
Bake in oven 10-15 minutes until crisp.
Remove from oven and allow to cool.
Once cooled fill wrap bowl with salad ingredients and serve.
