Curried Grilled Vegetable Wraps
4 Simson’s Pantry™ wraps (heated as per packet instructions)
1 zucchini, sliced
1 small yellow capsicum, sliced
1 bunch asparagus
1 bunch spring onions
2 tsp. curry seasoning
1 tsp. olive oil
1 cup greek yoghurt
Handful of fresh mint leaves, roughly chopped
Handful fresh coriander leaves
Grill vegetables with oil until tender. Sprinkle vegetables with curry seasoning and toss to coat.
Combine the yoghurt with the mint leaves and mix well.
Spread a dollop of the yoghurt mix on each wrap.
Top with the grilled vegetables and coriander leaves. Wrap and enjoy!
